JAPANESE DINNER IL CUORE RESTAURANT
Monday 30 September at 8.30 pm at the restaurant Il Cuore, via romana 123r, Florence, a refined dinner with the pairing of four Japanese sakes.
In collaboration with the Italian Sake School that will accompany us in the dinner with stories and curiosities from the world of sake.
Menu:
- Tasting of three vegetable appetizers: pickled vegetables from “Kyoto” of the day, green beans with sesame pesto, wakame seaweed and pickled cucumber.
- Hiyayakko - Cold Tofu: Cold tofu made with 100% Japanese soybeans and “Mount Fuji” spring water with Katsuobushi (dried bonito fennel) and soy sauce.
- Kakuni: Braised pork belly with soy sauce, sweet sake and “Okinawa” brown sugar syrup with soft-boiled egg.
- Miso soup with Tatsumi Miso by KAJITA: Fish broth and artisanal Tatsumi miso by KAJITA, a historic producer of soy sauce and miso from the prefecture of “Ehime”, wakame seaweed and Japanese tofu
Choice between:
- Bara Chirashi: Sushi rice bowl with marinated mackerel, salmon, sea bream, diced cucumber and omelette with soy sauce seasoned by the chef
or
- Temaki-zushi with special soy sauce: Salmon and sea bream sushi cone
