ITALIAN SAKE TASTING - Between tradition and innovation

RISO SAKE is the first Italian sake brewery.

The production of this sake is born from the contamination of the ancient rice-growing tradition of Pavia and the equally ancient Japanese tradition of nihonshu, known as sake in Italy.

A tasting of four sakes with the extraordinary participation of the producer (Nicola Coppe) who will reveal to us what lies behind the scenes of the work in the cellar.

The following will be presented at the tasting:

Move

Sparkling sake , refermented in the bottle. It is born from the fusion of the Japanese tradition of using koji, the Italian tradition of classic method sparkling wine and the brewing tradition of using yeasts.

The alcohol content of about 11 ° makes it drinkable and pleasant to drink in any context of the day. We like it served cold, between 5 and 8 °C and possibly by the glass to appreciate its color and intense aroma.

Cloud - Nigori Sake

Nigori sake is a type of Japanese sake that is distinguished by its characteristic cloudiness. "Nigori" in Japanese means " unfiltered ." Unlike other types of sake that are generally filtered to obtain a clear drink, nigori sake retains a certain amount of undissolved rice, which gives the liquid a cloudy consistency and a cloudy appearance.

This sake, which shares the same preparation path as Vero, is our tribute to the category of Nigori, an ancient Japanese tradition. Its consistency and cloudiness make it unique for pairing with desserts and creamy cheeses. Enjoyed fresh, after gently inverting it, it can also be used as a topping on ice cream.

A sake that we could define as classic , complex and enveloping. On the palate, the Japanese tradition is initially perceived, while at a later stage the characteristic notes of carnaroli rice emerge. On the nose, the characteristic of banana impressed by the Japanese yeast number 7 is clear. The structure of this sake allows a very wide serving temperature that goes from 6 to 45 °C.

Chinese Original

This Sake represents the highest expression of our experimentation, the result of a union between Japanese tradition and the application of the most advanced scientific knowledge in the field of fermentation and enzymes. The rice used for its production is an ancient variety of origin, the Chinese, from the "Una Garlanda" farm. Not being a traditional sakamai (sake rice), this rice, thanks to a process of sugar extraction and filtration before fermentation, is able to express itself at its best also in its alcoholic profile.
